Raspberry Chia Pudding
Chia seeds make an easy-to-prepare dessert that nourishes the body while satisfying the sweet tooth. These tiny powerhouses are rich in omega oils, making them ideal for balancing gut constitution and boosting vital energy throughout the day.
I have made this delicious raspberry chia pudding many times over the years. Once, I prepared it for a yoga teacher training course, and another time for students at Quinta, a farm hotel in the UK. The first version was made using freshly harvested raspberries in May and June, when our nearly 3,000 berry plants bloom and bear abundant fruit. We often sell several hundred kilos at farmers' markets in Covilhã, Portugal. The volunteers loved this dessert, specially crafted for those following a sentient diet who adore naturally sweet treats.
