Raspberry Jelly Tart
You can make these quick gel tarts using pulpy fruits like papaya, blueberry, mango, strawberry, or melons. The versatility of this recipe makes it a wonderful foundation for seasonal fruit desserts that celebrate nature's abundance.
When we made this recipe during harvest time, we first spent considerable time collecting raspberries, one fruit at a time, from our plants. We have expansive raspberry fields with nearly 3,000 berry plants, harvested in May and June. With the abundant raspberries, we created a variety of desserts. This raspberry jelly tart was shared with many volunteers at farmers' markets in Portugal and Covilhã.
Everyone loved the tart, especially young people with a penchant for sweets. It was particularly embraced by those who prefer vegan foods but lack cooking skills—this recipe requires no baking and comes together beautifully with just a blender and stovetop.
